Since this modern craft bakery was set up nearly 2 years ago, it has gone from strength to strength and, using traditional artisan methods in a modern production unit. They are currently expanding the business and are in the middle of investing £2.5 million in constructing a brand new state-of-the-art production unit in order to increase production output. The bread and Vienoisserie is sold in their own retail outlets already but the next stage of the business plan is to expand into the wholesale market. As a result of their success, they are looking to recruit a talented Head Baker/Bakery Manager. The ideal person for this job role will have a minimum of 8 years experience in high volume baking but with the emphasis very much on quality produce using traditional methods. They will have a minimum of 3 years managing and motivating a team including recruitment, performance management, appraisal and development. As well as possessing the required craft skills, you will need to demonstrate commercial awareness of the market place and the ability to meet demand. You should also have a competent understanding of UK Fire, Health, Safety and Hygiene legislation relating to the bakery industry and have proven experience in this area. They need to have a pro-active, self-motivated and hands on attitude to their work and be happy to work on the production (varied shifts day & night). The working environment is friendly but professional. You will need great communication skills and a real passion for real bread!
